Custom toolbar/templates

This question may have been asked before. If it has, then I apologize.

In Word 2002 and 2003, I used to be able to create a custom toolbar. From
there I would setup 2-4 Word templates/letters so all the user had to do was
to click on the template that they wanted to use for a letter.

I have read of the ability to customize the Ribbon or to make the templates
add-ins if they are a carry over from Word 2002, 2003.

Is it possible to customize the Ribbon to have these Word templates readily
available? Are there any set by set instructions?
