Customized template disappears

Our server crashed a few weeks ago so all my settings were lost. I am trying
to customize my toolbars but the customizations won't stay. The stay for a
while and then disappear. I have looked for the "normal.dot" document but
have not been able to find it. The only thing I find in Office even close is
"normal.fmt". In my toolbars Customize box in the Save In drop down, it only
says "normal" with no ".dot" after it. Please help.

Do you mean they done stick after application close?
If so do you have Acrobat Adobe on your system?
Adobe can have an effect on the saving of customisations, AutoText, etc.
Do your customisations and try Ctrl+Shft+File and choose SaveAll.
This should save you edits even after application close.
If you do have Acrobat there are instructions to solve this conflict.
Come back if required.
Hope this helps

I have Adobe 6.0.6 and did download all the fixes/patches. I also did use
the SAVE ALL and that did not work. Do you think it has something to do with
the "normal" file that I can't seem to find? Also, it seems that sometimes
word closes itself out when I am not in a document and just have it open and
then that's when all the icons on the toolbar disappears.

Check under Tools, Options, File Locations, User Templates for the directory
where Normal.dot is located. These files are hidden files so ensure you have
"Show hidden files and folders" checked in your Folder Options, Tools on the
Windows Explorer window.
I cannot remember that far back for Adobe 6, so am not sure if this is
causes the problem.
But what is very possible is that the Normal.dot has become corrupted. so
finding the document, deleting or renaming it .old, then let Word create a
new one upon restart could correct your problems.
Here is a link to very handy instructions to solve the possible Adobe
conflict. I have Adobe 7 and found that using the instructions at the bottom
of this site and then reinstating after a couple of Word activations, all was
well and has been since.

Best of luck

Normal.dot is a hidden file in the folder identified at Tools > options >
file locations > user templates.

Company installations that lose personalisations after a while are often
caused by IT support replacing the normal template at login/out.
