customizing headers

When I want to add a header to a document it isn't often
that the header I want is one of the choices offered in
the header/footer menu. Is there a way to create a
header that I can just put information in that isn't one
of the choices offered?

You can type any text you want into a header or footer. The AutoText entries
are just for your convenience.
