Customizing the "Subject" field in Outlook's calendar

I would like to be able to customize the entry list in calendar's Subject
field.

For instance, I would like to edit or add to the standard list, (Meet With,
Lunch, Dinner, Visit, Call, Birthday, & Complete). Any guidance on where to
make these changes would be appreciated.

Do you mean the color labels?

I don't know if this was in previous versions of Outlook but in Outlook 2003
you go to Calendar and the you press Edit-> Label-> Edit Labels...
