what is the upper limit (if there any) of customXMLparts that can be added
into a word 2007 document and what is the upper limit of contentcontrols
that can be mapped in a word 2007 document?

As an office open xml element is actually nothing more than a zip archive
containing several xml files, the upper limit is the maximum number of files
a zip archive can contain. The upper limitations for a zip archive used to
be 65535 files and a totall archive size of under 4GB.

Although a docx file of that size would be valid, I doubt Word could handle
it.
