Open your "blank template", right-click where the date goes and click on
"Toggle Field Codes". Add the word "CREATE" before the word "DATE". That
makes the field stay the same date instead of changing. Right-click after
adding the word and select "Toggle Field Codes" to return to the actual
date. Save your template, close it out, then create a new document based on
that template.

Hi,

What you have is probably a simple DATE field. If you
select the date and press Shift-F9, you'll probably see
something like:
{DATE}
or
{DATE \@ "MMM d, yyyy}
or DATE with various other types of switches that control
the formatting.

What you need to do is to change DATE to CREATEDATE, or
SAVEDATE or PRINTDATE, depending on which of these you
would like to use to control what date appears. Check out
Word's help file for more details.

When you're done, press F9 to update the field.

Cheers
