Default view without markups

In both Word 2003 and 2007, I am trying to set the default view so I don't
get the markups that have been added to a document when I open it. In other
words, I want the markup to be displayed "on demand", but not every time I
open a file. I tried by saving the Normal.dot template with the markup
hidden, but that didn't work. I didn't see anything on the tabs inside the
Tools/Options menu either.

You can do the following: In Word 2007, click the Office button, and then
click Word Options. In the Trust Center category, click Trust Center
Settings. In the Privacy Options category, deselect "Make hidden markup
visible when opening or saving" and click OK. (In Word 2003, the option is
found at Tools | Options, Security tab.)

When you have cleared the option, you can choose what to show in your
document (in the Show Markup list on the Review tab of Word 2007, and in the
Show list on the Reviewing toolbar of Word 2003). Note that not all choices
may be possible to save with the document.

Important: Clearing "Make hidden markup visible..." only affects *your*
installation; if you send your document to other people, you have no control
over what they see.
