Delay message sending

I want to use MS outlook to send out reminders to people who have
artwork in a coop gallery to pickup or bring in their artwork on
variuos rotation dates. Since I have the list of who is showing when,
I want to be able to create messages to those individuals in long in
advance, but only send them one or two days before the scheduled date.
Is there a way to do this?
