Delete record question

I have a database designed after the Northwind database. My question: If I
have a product that is no longer available, and I don't want it to show up as
a choice on my Orders form, how do I handle this so that existing records are
not affected? I am currently using a combo box on my Orders subform set to
continuous forms.
