OK, this can get very complex, although the principle is easy enough...
Word marks text with a "language", which controls which dictionary and
grammar tool it uses on that piece of text.
It is designed to have multiple custom dictionaries, one for each language.
However, we normally suggest that English authors you should have only ONE
Custom Dictionary, and set it to "No Language". That enables Word to use
the content of the custom dictionary with ANY text language.
So the first thing you should do is set your custom dictionary to "No
Language", so it will be active regardless of whether you are spelling in
English US, English UK, or English AUS.
Next, you MUST follow the instructions for editing the custom dictionary in
Word's Help very carefully. If you save a custom dictionary incorrectly,
Word can't see it, or can't read it. For example, if you have the extension
..txt Word will not recognise it as a dictionary.

Word 2004 doesn't allow me to Add words to the custom dictionary. I opened
custom dictionary, removed a word, and saved it to custom dictionary.txt. It
is saved as Western Mac (Roman). The language preference under tools is
English US (although some of my documents may be in English UK, as I am
Canadian and we switch back and forth. I will not know, when I receive a
document, which language it was set to). Please help, as I am a scientist, and
have a slew of words that aren't in the dictionary.
