Difference Task updates and timesheet approval

When a team member record their working hours and then press Update All is it
normal that the project manager receives a Task update and a timesheet
waiting for approval?? Why both?

Also when a team member submits his timesheet ALL the project managers
receive his timesheet for approval. How do I change it so that only the
direct project manager receives it??

Your system is probably not configured very well.

The PMs are receiving Timesheet approval notices because of three things: 1)
they have been given the permission to Approve timesheets for Resources; 2)
the RBS (Resource Breakdown Structure) is set up so that the same set of
resources report to multiple managers; and 3) you are using Managed Time
Periods.

In general, Resource Managers should do Timesheet Approval, and PMs should
only approve Task Updates.

Setting up permissions can be very confusing for people who do not fully
understand how the security model works. You should consider seeking help
from a Microsoft Certified Partner that specializes in Project Server. They
will discuss you needs and objectives and then will show you how to set up
Users, Groups, Categories, and other settings to get the most out of your
system.
