In Outlook 2007, Tools=>Options->Mail Format Tab->Signatures Button. Define
your signatures and assign an account to each one. When you change your
signature, the account automatically changes.
If this is not working for you, please explain where it fails.

After furious head scratching, Terry asked:

| tried to delete the signature for an account called "mnt....." - our
| primaty account. Then I created a signature for a second account
| called "cas....." The signature still shows up on the "mnt...."
