Dimension fields

1 - How does one delete all the dimension fields?
2- Upon reopening a file, I noted that the dimension fields had all changed
from the previous save. What caused that to happen and how can it be
prevented?

They changed values to ones other than were originally calculated and the
page setup where you set the scales had not chenged when I went to see if
that was the cause. Any ideas?
Once I had the drawing completed, I don't really need the scale any more
that is why I am trying to delete all the dimensions. I am going to import
the visio file as a layer into a program that is used to calculate security
camera installation to maximaize the focal planes and angles. A not so easy
job.
