OUTLOOK VERSION: Outlook 2003 w/ sp2

ISSUE:
User has a contact, let's say (e-mail address removed), with "Display As" set to
John Smith.
User then receives an email from (e-mail address removed) but it comes in From
"John Smith, Jr." in the display. Which I always thought was controlled by
the sender's side.
The user says that this used to not be the case. That they had a way to
make sure that any emails from (e-mail address removed) always displayed whatever
their contact "Display As" was set to. So if they changed
(e-mail address removed)'s contact to "Jane Doe" it would then display as Jane Doe
when that address sent them email.
I'm saying that is not the case, but can't prove it.
So, can I make sure that any emails that come in from (e-mail address removed) or
any other contact this user has filed, always shows as "From:" and then their
"Display As" field in Contacts?
