Anytime I open a template of any kind on Word, the language displayed is Spanish. I want to change that to English. How do I go about doing that?

It's not Spanish, it's a fake language. This practice is called "greeking";
the text is in pseudo-Latin (or pseudo-Greek) to give you an impression of
what the page will look like once it's filled with text; since you couldn't
possibly understand the text itself, you tend to focus on the layout rather
than on the meaning of the words. You will find this in many applications,
including Pages.

Thanks, Michel. Another disadvantage of my not having Word 2008 installed. I
really thought it was a simple question...

Hmm, I read the other day that there were 60 million Hispanic people in the
US. What a shame that anyone can go through schooling and not know that
greeking -- just by the look of it -- is not Spanish. One of the burdens of
a modern education, I suppose.

French text… :->
