Why is it that Word has to insert the current date into an already saved document when nothing has ever been checked for "Automatic" dating?

Because the user inserted the wrong kind of date field!

There are several kinds of fields that will give you a date: Go to
Insert>Field>Date and Time and read the descriptions.

If you want one that never changes, use CreateDate.

I cannot get Word to use the correct date even though my system date is set correctly. It is Oct. 9 but Word keeps on wanting to insert Oct. 3. I cannot get an answer on how to correct this problem.

That suggests that you launched Word on Oct 3 & have left it running for
nearly a week. The program reads the system date on startup. Try Quitting
the program & starting up again - see if that doesn't correct the problem.

For that as well as other reasons it's beneficial to shut the program down
once per day. In fact, its a good idea to restart the Mac periodically
rather than just allowing it to run/sleep 24/7.

If that doesn't correct the problem provide the necessary details omitted
from the original message - OS X version, Office version type of Mac
configuration as well as how you're inserting the date, etc.
