In the course of my job I often have to imbed my signature on Excel and Word
documents to approve. My signature is a jpg file (I insert picture). I have
come to find out even when I protect the document someone can cut and paste
my signature, which is not good.

How can I either protect that portion of the document or the entire document
so no one can copy my signature I place on documents for approval?

Larry I'm not sure this is an issue in which you can protect yourself.
The reason being anyone can take a document you sign and scan it and copy
your signature and in the case of the word document they can always use cut
and paste then crop or us the Vista Snipping tool to make a new copy of your
secured signature. You can authenticate a document with some software like
Adobe Acrobat Standard for example which has a Certified Document feature
where by a document is secured with a Digital ID that is purchased from and
guaranteed(insured for a certain amount of finicial damages) by Chosen
Security, Global Sign, Keynectic or the ubiquitos VeriSign aka GeoTrust

I know I didnt answer your question directly but I hope I offered a solution
that ensures others that the document they are viewing is from you.
