Either click on the backwards P symbol on the toolbar when composing email
or when using word or look in word's or a new message's tools, options
dialog - I think it's on the View tab. You want to hide all formatting marks
or hide all spaces.

In Word, you simply click on the Show/Hide icon on the
toolbar. In Outlook, open a message and choose Options from
the Tools dropdown menu. Then click the View tab. Under
Formatting marks, select or clear the check boxes.
