I want to double click a visio shape/object/stencil in a diagram and have it
launch a program. So double click a server and have it launch word or notepad
or some other program. I have found how to launch a URL but not a program.

I think the nearest you can get is to insert a hyperlink
menu Insert -> Hyperlink
use the Address browse button, choose local file and select All files
from the file type and browse to the appropriate folder.
You'll get annoying warning messages, even when linking to digitally
signed files (which sort of defeats the whole pupose of signing,
doesn't it).
