Double spacing in Outlook 2003 Signature emails

Outlooks 2003 SP3, all MS updates
HTML emails; Word as editor for emails
Format is set/defaults to Style>Normal

When sending a New Outlook email my signature is double-space even though I
have created it with single spacing. I have the typical
File|Edit|View|Insert|Format|Tools|Action|Help drop down menus, but the
Format menu contains Style|Font|Paragraph|Background|Encoding|Plain
Text|HTML|Send Pictures from the Internet.
My name is in a Wendy Medium for scripting.
When I select (highlight) the double-spacing signature text and then select
Format>Style>Formatted and then Format>Style>Normal (essentially a 'reset'),
the double-spacing is removed as well as the Wendy Medium font on my
signature.
I'd like to NOT have the double spacing in my signature as a default AND to
maintain the Wendy Medium (if possible).

I've read all the posts about signatures but my problem is with the spacing
BEFORE the signature. When I open a new email in Outlook 2003 the paragraph
spacing defaults to double and I can't seem to find where I set that default.
