DUMMY .PST FILE

While I am on an official leave I don't want any of my colleague to access
any of my existing emails.

I want to create a blank / empty .pst file and on my logging off want to
change the original path to the dummy file's path so as to present a totally
blank Inbox/Sent Items folder when opened in my absence.

How to make such an empty file and change the path of the existing?

In the first place why would any of your "colleagues" want to look at your
emails anyway and why would you want to hide them in the second?
