Have set up a shared e-mail address. Can an e-mail message be kept marked as
unread until it has been sent.(even though a number of people will open the
message)

Not sure about your scenario as we are talking about received messages that
haven't been sent? :-S
Anyway; you can change the way messages are being marked as read in;
Tools-> Options-> tab Other-> button Reading Pane

request to sell something. We both read it and no one replies to the sender.
Is it possible for the message to appear unread and then once its been
replied to change to read

Yes, read it in the Reading Pane and don't have it automatically "mark as
read" by the option I pointed out.
