Editing a template in notebook layout

I am using microsoft word 2004 --

I am interested in editing the header of a new document under 'notebook
layout'. for example whenever a new document is created it always has
'date created' in the header. If I switch to normal view or page
layout I am able to view header/footer and change it, but when I switch
back to notebook view it switches back to the 'created' field code.

is there a way to edit the template so that I can have it say 'page x
of y' everytime I open a new notebook document?
