Eliminate default dots, arrows, and symbols while typing.

When I type, my spacebar makes dots, the tab bar makes arrows, and the return key makes
a bent arrow... how do I go back to just regualr document defaults?

Click the button with the pilcrow (¶) on it or go to Tools > Options > View
and select what you want to see. These non-printing characters actually make
a lot of Word formatting tasks much easier, which is why the option is
there.
