email address & display name is incorrect in Outlook 2007 reply

Hello - this is my first post - i've posted over at the microsoft forums and haven't gotten a response yet!

I am using Outlook 2007 to access my IMAP account. When I receive email from contacts with non-ASCII characters in their display name, I am unable to reply as Outlook mangles the display name in the To: field of the email.
For example:
Joëlle <joelle@****.com>
becomes
Joëlle <joelle@****.com> [=?ISO-8859-1?Q? Jo=EBlle _<joelle@****..com>?=]

(Note that if I attempt to copy & paste this text from the to: field to the body: field, it will look absolutely normal in the body field). If i attempt to send this message, I receive an error. I'd greatly appreciate any feedback or suggestions!

Also - the problem is described in detail here, but the solutions are for older versions of outlook/windows:

Did you ever find a real answer?

I have the exact same problem, and I don't know what to do about it.

This used to be a problem in 1994 with Eudora 1.0 or whatever one had back
then, and the whole Quoted Printable hooplah. Ever since, it seems that all
civilized e-mail clients have learnt the basic internet standards. Except for
outlook 2007, then of course. I must admit I am disappointed.
