email addresses doesn't "stay" in autosuggest (Outlook 2007)

I have one email address I use fairly often, but it never stays in
autosuggest (while others do). Each new session I must "manually" add
the email address; thereafter in the same session autosuggest will
retain the email address. However as soon as I close out of Outlook
the email address is "forgotten" by autosuggest.

Click on Tools -> Options -> Email Options -> Advanced Email Options and at
the bottom make sure the "Suggest names while completing To, Cc and Bcc
fields" box is checked.

This is a symptom of a damaged mail profile. You should create a new one.

If you use another address which hasn't been added to the cache yet (make
one up to try it out; it doesn't matter if it is valid or not), and send the
message. Does this address then stay in the AutoSuggest list?

My guess is that it doesn't. In that case, either Outlook is not closing
properly so that the updated cache is never written (look at the date of
your nk2-file) or that the cache is corrupt.
