Email Monitoring - incoming and outgoing!

Hi all,

I'm a sys admin and i've been told to monitor incoming and outgoing email
traffic. Is there a way to do so? Will I be able to read employee's emails?
is there a program or an option within windows or exchange?

There are many programs that can archive email - all are for either exchange
or a gateway SMTP server.
