Email receivers sometimes see my text with odd symbols.

I am told by some receivers of my email that they see odd symbols within the
text of my emails, particularly where punctuation has been used. This is a
new development.

I use Outlook Pro.

Can you help? Thanks.

Yes, curly quotes and apostrophes, em dashes, en dashes, fraction characters,
and other "odd" punctuation marks don't convert in some e-mail programs. Turn
off the auto correct options for those characters and just use straight
quotes, hyphens, and fractions formatted with a slash (1/2). Off the top of
my head I can't think of any other characters that won't convert, but I'm
probably missing some obvious ones.
