eMail To Do's Labeling for Tasks and My Day

Operating System: Mac OS X 10.5 (Leopard)
Email Client: pop

Many of my follow-up tasks are connected to, or are the result of, emails I receive. When I set a priority and they go on to the My Day task list, they go in labeled as the Subject line of the email. The Subject line wording is often meaningless or not accurately reflective of the nature of the task. How can I change the wording of the subject line? The only way I have been able to do it is to forward the email to myself with a changed subject line. Is there a better way to do this?
