When I create a new email, I select a name from my address bok, Typically, a drop down window appears with a list of names beginning with the 1st letter of a person's name. However, this is only a partial list, and not the complete list of alphabetical names beginning with the letter. Is there a restriction on the number of names on this list, or how do I get all the names of that letter to show?

I think you are seeing the mini Address Book that shows up in the To field.
It uses the Most Recently Used (Autofill) list. I have it turned off. I
simply start typing and Entourage will fill in the address if it's in my
Address Book.
