Emails date and time stamp is not correct

I have Entourage 2004 for Mac V 11.4.0 and when I open up entourage it starts downloading all my email, the problem is that in the Inbox preview panel it puts that exact date and time stamp, not the date & time the email was sent.
Now if I open the email and replay to it, the correct date and time shows in the email header.
It has not always done this. I don't know how to change it back so my emails have the correct date and time stamp. Any ideas?

In the middle pane, with the list of emails, at the Top Left side you will
see:- " Arrange By: " and then Received.
Click on Received and select from the drop down menu whatever you wish.

Welsh, I know how to change how I sort my emails. I'm talking about the date and time stamp that is give to incoming emails.

View your messages via Sent rather than Received. The Sent time is put
into the message when the sender sends it, not when you receive it. Look
under View menu --> Columns.
