Emails garbled

I have recently upgraded our SBS server 2000 to server 2003 and email from
outlook 2000 to outlook 2003. Some emails [mostly from china] are now
appearing as garbled unreadable text. Historic emails are also showing in the
same way, but not all. Does anyone know a solution.
