I am wondering if there is an application that will allow me to load my Entourage calendar on an ipod-touch?

That should already be built into Mac OS X and Entourage.

Enable calendar syncing in Entourage menu --> Preferences... --> General
Preferences --> Sync Services.

In iTunes you'll enable your calendar to sync to your iPod.
