That depends on what version of Mac OS X you are using. It's always
important tell what versions you are using to make the answers easier to
give.
10.3 and above you set the default in Mail and Safari, both under their
respective preferences.
Up to and including 10.2 is in your System Preferences available via the
Apple Menu.
