entourage selecting receipient address at outgoing

I am having hard time to putting receipient address from "MAIL".
When I create new message, I use "New" icon, the new text appear and asking for receipient address from the list from address book. But I have too many names appeared in the list. If I group some addresses in "Address Book", then I can not make modify (ex. removing some address one time only) at sending. There are only "name" and "address" in listing box. Can it be changed with different columns? and make different sorting other than just "name" ? I appreciate giving me any tips to manage this issue?

If you just continue typing the name, Entourage's list will narrow down to
the exact address. After a while, it learns the most used for autofil.

I don't even use the little auto fill address book. It just gets in the way
for me. Try typing out the entire name and see.

You can add names to the Nickname field in the contact. It's never seen but
is an easy way to quickly bring up certain addresses and it helps when you
have a lot of people with the same first name. For example, you have a lot
of Bobs in your Address Book. You could use nicknames like listbob, workbob,
friendbob, fatbob, skinnybob, dufus, knucklehead...no one can see it but
you.
There are only "name" and "address" in listing box.

This is not the regular Address Book. As I said, it might be more confusing
to have it open. If you click on the icon that looks like a card, it will
toggle off.
