Is newest version of Office written in Cocoa yet?
No, and it never will be. Why should that concern you? Apple has confirmed
many times that Carbon is an equal programming platform for OS X - actually
it can do more than Cocoa.
And
I have tried using both Entourage and Mail at the same time if that is
advisable or not I'm not sure. But one of the problems is that System
Preferences doesn't handle the mail client, you have to open
preferences in Mail.
That's not a problem - it was just a peculiar design decision of Apple in
Panther. (Maybe they want everyone to think that Mail is the "normal"
application. It's the same for browsers - the preference is now in Safari.)
That seems to ignore who sends the mail
specifically or the default Address Book. What is going on with these
depending on which client is default.
I don't understand the question. There is no such thing as a "default"
address book. What "default mail program" means is that if you run into an
email address link - what's called a "mailto URL" - anywhere on your
computer and click it, a new mail message window will open in your default
email program. Similarly for http URL links opening your default browser
when clicked. There's no real equivalent for contacts, except maybe for
vCards. If you want .vcf files (vCards) which had not been "hard-coded" for
one app or the other to open in Entourage rather than Address Book, do a Get
Info on it/Opens With/Entourage, and click Change All.
It's very true that Apple's Mail (and iChat) coordinate well Apple's Address
Book, and obviously email and contacts coordinate seamlessly in Entourage,
so it makes sense to make one application or group what you use regularly.
Do I run a chance of corrupting
files using them both occasionally?
No, not at all. You just might get confused trying to remember where to look
for things. If your mail account is IMAP, then you can access both received
and sent messages from either application without problem - it all works
perfectly. If you have a POP account you won't find previously downloaded
messages in the other application. (And even if you leave messages on the
server, that doesn't help for sent messages. IMAP is definitely better.)
Similarly for contacts and calendar events and tasks/todos. If you make them
in one app, you won't find them in the other. If you like to use Entourage
but want to use iSync to sync to cell phones or .Mac, you might be
interested in my scripts Sync Entourage-Address Book and Sync
Entourage-iCal, from

They keep Entourage synced up with all the iApps and this available to iSync
and iChat as well.
