explain the difference between Entourage and MS Office 2003... Functionality

Well, this page gives a comprehensive breakdown of what is available for
mac:

But, I can't find a proper 'features list' for Outlook 2003 on the MS web
site! Typical!

The most important one is that Entourage runs on the Mac and Outlook 2003
runs on Windows. So your choice of OS dictates which one you can use.
