Envelope printing from a document with Track Changes on

I received a document to use as the basis for printing envelopes. This
document has Track Changes turned on. I change the name information and
accept the changes. Using Tools/Letters and Mailings/Envelopes and Labels -
the address area shows the old and the new name. Why?
