No idea what's causing that but my suggestions are:
a. find an option in your printer setup that lets you print monochrome only
(and test that "blue" isn't regarded as "white")
b. format the first M in MERGEFIELD in any of the MERGEFIELD fields in your
envelope as black text and add the \*Charformat switch, e.g.
instead of
{ MERGEFIELD myfield }
use
{ MERGEFIELD myfield \*Charformat }
and do the equivalent thing for any other fields you have on your envelope.
