How do I add new addressee addresses to the office address book so I can insert them onto the envelopes?

How about Tools> Address Book? Seems like a pretty good place to start :)

That sounds simple, except there's nothing that says add new. I tried for about 30 minutes this morning and can't figure out how to add new addresses. The only one that's in there is mine.

Sorry Heather - that was an error on my part. I apparently misread the
original question. I thought the OP wanted to *insert* an address.

If you want to add a new contact while in Word use View> Toolbars to turn on
the Contacts toolbar which has an Add button for new contacts. Otherwise you
can add new Contacts from Entourage ‹ All Office apps share the same
Contacts Database.
