Excel 2007 Chaning cells to a date format

I have a file that was originally created in Excel 2003. I have since
converted it into a 2007 file format...every once in a while when I open up
the file, excel has converted most of the fields into a date format. The
integrity of the document is still in tack, but then I have to go and change
everything back into the format that it needs to be in. Any ideas or
suggestions?
