Excel 2007 Minimize issue

I have a client who is having an issue with Excel 2007. Whenever she
minimizes the program and leaves it for about 20 minutes unused, upon
returning to it the display is messed up. Cells are blank, many of the menu
options are missing, and the ribbon has some partial information in it. Now
in reality everything is there, it just appears as if the video did not
refresh properly to properly display the screen. Also, when you right click
on the Excel program in the start menu, it comes up with a black box for the
mini-menu, and won't display anything unless you scroll over it.

Uninstalling and reinstalling the product failed to correct it. There are
no 3rd party add-ins for the program. The problem only exists with Excel
2007 not any other Office product. The screensaver is not to blame since its
set to 10 minutes, and I was able to get Excel back, after the screen saver
turned on. The problem occurs both when the user is actively using her
machine and not actively using her machine. The video driver is up to date;
the memory is 1 GB with an appropriate Virtual memory allocated. Nothing
else appears to be interfering with the product, and it throws no errors in
the event viewer. User is fully patched with SP1

I think that covers everything, I'm fairly stumped at this point.
