Is there a way to make the highlight around cells in Excel 2008 brighter or more distinct? My eyes aren't what they used to be and I can barely see the pale blue highlight in a busy spreadsheet.

If you're talking about the highlight that surrounds the selected
cell(s), that color is chosen in System Preferences (Appearance pane).

Note that changing that color will change the color for all applications.

Note also that you don't have to settle for the 8 colors in the dropdown
- choose "Other" and set your own favorite.

Yeah, I think I misinterpreted the request - although changing the color of
the grid can make the selector contrast better :)
