Excel Default Format

I have upgraded to Excel 2007 from 2003. A file that had general format for
cells as a default has now changed to date format. This has had a major
impact
on a very large file.
Does anyone know how to reset the default in an existing file?

Select all cells on the worksheet. To do this, click on the button where the
column identifiers and row identifiers meet (top left of worksheet).

On the Home ribbon at the top the block titled 'Number', click on the
dropdown arrow at the right of the selection box at the top and select
General.

The challenge is that these are fairly large worksheets with data already in
different formats. wherever it was General before they have now gone to date.
