When I type in a cell a number, minus sign, and lower case i (e.g.,
300 - i) and press enter, the program makes the lower case i a capital
I, and I cannot override this action. It does not do this with other
lower case letters, but always with the letter i. Is there a work-
around?

It's because there is an auto correct entry for i. go to tools-Auto correct,
and delete the entry for i.
