Run Activity Monitor or XRG while you do your data entry.

It may not tell you what's being used while you do your data entry but
it might give you a pointer. For example, if you see CPU spiking, that
says Excel is doing something CPU intensive in the background while you
do data entry. Nothing you can do to fix that, really, but it will tell
you what's going on.
If you suspect it's attempting to access a file or other resource while
you do the data entry, you might try running fseventer

It will show all the files being touched on your system as soon as you
turn it on. Maybe it's touching something on a server or doing some
network.
Also, is this a new install of Office or did Excel come over from a
previous system during Migration. If you did a migration, you may have
ALL SORTS OF kruft from your old system that no longer exists. I
migrated my MacPro environment to a MacBookPro and a bunch of things in
the startup environment brought the machine to it's knees when I tried
to login. I logged in with SHIFT key depressed to disable all that and
removed items until I found the culprit. You might try that as well.
