Yeah, you're right - even though you posted to the Excel group :)

In Word Shift+Command+S is used for navigating to the Style List. The Save
As command has been assigned Control+Command+S instead. it's been that way
for a long, long time & MS keeps it that way for the purpose of not confusing
us old timers who expect it to work as it does.

If you wish, you can reassign keystrokes through Tools> Customize Keyboard.

OK - Pardon my "senior moment" - Apparently I assigned that myself on my MBP
& had forgotten having done so :-} The reason I did it, however, comes back
clearly...

The default keystroke for Save As is F12, but that key was commandeered by
OS X for Dashboard some time ago. That leaves you with 2 alternatives;

Either use the Dashboard Preferences to disable the F12 key - reassign a
different stroke if you wish [such as Shift+F12] which will allow F12 to
work for Save As in Word, or

Use the Tools> Customize Toolbars & Menus - Keyboard facility within Word to
assign a stroke of your own to the FileSaveAs command.

....In fact, you can do *both* if you wish :)
