how do you make the x axis start at 0 and not 1? i have excel x for mac os

When you say "x axis" are you referring to a chart? If so, what type?
As an example, for a XY-scatter chart, select the x axis and choose
Format/Selected Axis. In the scale tab, enter 1 in the Minimum textbox.
Other charts can be adjusted similarly.
If you're referring to the column headers, you can't change them -
columns always start at 1 (or A, if A1-style references are used).
