How do i number my invoices in excel with a different
number for each invoice?

Without programming, I don't believe there's an easy way to do this, unless
you come up with a manual naming system such as "<companyname><date>" which
should ensure uniqueness in your system. However, you might try the folks
over in the Excel newsgroups for more assistance with automation in Excel.
