Does anyone know how many exchange accounts you can have at one time in
entourage without setting up separate identities?

There's no known technical limit, although you may start to see performance
degrade if you're trying to sync millions of items across hundreds of
accounts.

How many accounts did you have in mind?

No need to create separate identities.
